Bread snacks in transparent packaging
After industrial bread slicing, crumbs inevitably remain among the whole pieces. In transparent packaging, they collect at the bottom and affect the product’s appearance before the customer even opens the pack.
NOTIS manufactures the industrial SV-NOTIS vibratory sieve to remove these crumbs. In this article, we show the machine in operation and explain its role in a bread snack production line.
Equipment Set for Bread Snack Production
NOTIS recently manufactured another set of machines for a bread snack producer in Blagoveshchensk. The city is located in the Russian Far East, approximately 4,500 kilometers from the NOTIS factory in Berdsk, Novosibirsk Region.
The finished bread snacks are packed in transparent plastic containers, so one of the objectives was to minimize the amount of crumbs. Customers should see neatly cut bread pieces, not what was left behind after slicing.
The equipment set includes:
- the MNH-01-NOTIS bread slicing machine for cutting whole loaves into slices
- the SV-NOTIS vibratory sieve for crumb removal
- the OPP-NOTIS coating machine for the even application of oil and seasonings
During factory testing, each machine was tested separately. In the complete production line, the product passes through each stage in sequence: slicing, crumb removal, and seasoning application.

Where crumbs are generated during slicing
Bread snacks come in a range of formats: cubes, sticks, thin pieces, and large slices. However, the bread must first be cut, and it is impossible to eliminate crumb formation completely at this stage.
The amount of crumbs depends on the bread structure, recipe, and preparation before slicing. Highly porous bread produces more crumbs. Manufacturers therefore develop their own recipes and preparation methods to help the pieces retain their shape during slicing.
Industrial bread slicing machines can cut whole loaves. Only a limited number of manufacturers worldwide produce this type of equipment. NOTIS is one of the Russian companies that manufactures these machines.

How crumbs are removed
After slicing, the bread pieces enter the perforated screening surface of the vibratory sieve. Directed vibration gradually moves the product toward the outlet. Whole pieces remain on the surface, while fine crumbs fall through the openings.
An enclosed collection tray is located beneath the sieve. It directs the crumbs into a single container, preventing them from scattering around the equipment and making them easy to remove. Screening takes place continuously as the product moves through the machine. The collected crumbs can be discarded or used, for example, to produce breadcrumbs.

The vibratory sieve may not appear to be the most complex part of the production line. Yet it removes exactly what customers notice first.
This is particularly important when croutons and other bread snacks are packed in transparent packaging. Both the cutting quality and the amount of crumbs at the bottom are clearly visible.
The vibratory sieve therefore contributes not only to a cleaner production process. It also helps the finished product look neater and more premium.
